This is not bland, boring lentil tofu. It transforms completely. Even if you usually avoid lentils or traditional stews, this lentil tofu will surprise you. After a few simple steps, the strong lentil flavor almost disappears, leaving behind a creamy base that turns beautifully crispy when cooked. Unlike soggy, heavy stews, this is light, golden, and something you’ll want to make every week, especially in the summer. Add it to your salad or pair it with a sweet and sour sauce.
This recipe is naturally oil-free. If you prefer using oil, feel free to add a touch of olive oil to your taste. For an oil-free cook, place a piece of parchment paper in the air fryer basket so your food doesn’t stick.
Important: To ensure your lentils are perfectly clean and ready for cooking, it is essential to give them a thorough rinse.
(1) Start by placing your dry red lentils in a large bowl and covering them with cool water. Use your hand to vigorously stir the lentils for a few seconds, which helps loosen any dust or debris. You will notice the water becoming cloudy or murky
(2) carefully tilt the bowl to drain this water out, using your hand or a strainer to catch the lentils.
(3) Repeat this process three to four times, adding fresh water and stirring each time, until the water remains clear.
This simple step not only cleans the lentils but also helps remove excess surface starch, ensuring the best possible texture for your recipe.
