This easy Instant Pot quinoa and red lentil porridge is the perfect meal for busy evenings. Just add the ingredients to your Instant Pot, press start, and go about your day, run errands, head to the gym, or enjoy a walk. When you come home, you’ll have a fresh, warm, hearty, savory meal waiting for you.
This recipe makes 2 large servings or 4 smaller servings. It’s naturally oil-free, filling, and weight-loss friendly thanks to its high fiber and protein content. Even if you’re not a fan of lentils, you’ll hardly notice them as they break down completely during cooking, creating a smooth, creamy texture while adding protein and nutrients.
This nourishing porridge is especially beneficial during pregnancy and the postpartum period, when protein, iron, folate, fiber, and other key nutrients are in greater demand. Its soft, creamy texture makes it easy to eat and gentle on digestion.
Quinoa and red lentils make an excellent nutritional pair. Lentils are rich in lysine but relatively lower in methionine, while quinoa provides more methionine than most grains. Together, they create a well-balanced amino acid profile, making this meal a high-quality source of plant protein.
While both foods are nutritious on their own, combining legumes and grains (or pseudograins like quinoa) is a simple way to enjoy a wider range of essential amino acids throughout your meal.
Red lentils also provide fiber, folate, iron, potassium, and polyphenols that support heart and gut health. Quinoa contributes magnesium, phosphorus, manganese, and additional protein, while tomatoes add vitamin C, potassium, and the antioxidant lycopene. The combination of protein and fiber helps keep you satisfied for longer, supports healthy digestion, and promotes steady energy levels.
