If you're familiar with Dr. Greger's Daily Dozen*, you'll notice that cruciferous vegetables on the list. I don't know about you, but I'm not a big fan of steamed plain cauliflower (or broccoli). If you cauliflower a bit overwhelming, this delicious recipe might just change your mind. I use a tablespoon of extra-virgin olive oil, but as always, if you follow an oil-free diet, feel free to omit the oil.

Steam the cauliflower for 5 minutes and set aside.

In an air fryer, roast the bell pepper at 375 F/190°C for 15 minutes, or follow your manufacturer's instructions. (or according to the manufacturer's instruction).
Peel the skin off the bell pepper and dice it.
In a wok (or pan) add the oil and all remaining ingredients. Stir for a minute. Cover and let the mixture simmer for 2-3 min. Remove the lid and continue stirring until most the liquid has evaporated.
Serve warm and enjoy!
